Nearly every set I've picked up since December. I don't have the necessary space to display the ones I want to build until we move into our house in June. This includes:

Black Pearl
AC Mothership (probably just part it out and add the figs to my collection)
AC Alien Abduction (love it, definitely gonna display it, though maybe put a classic grey from series six in it)
Grievous Starfighter (not sure if I'll keep it to display though)
PQ Pyramid
PQ Rise of the Sphinx
Millenium Falcon
Republic Frigate
Turbo Tank
Bounty Hunter Gunship
Geonosian Starfighter
City Space Center
Atlantis Exploration HQ
Spy Jet Escape
The best part is.... I didn't pay more than 60% msrp for any of them! I have been very fortunate to have found a lot of great buys from the clearance and sales events in my area (thanks TRU for that great mistake last weekend!)

at least six more or so that I can't remember the names of and don't want to dig out of their storage place right now.

My other big problem is figuring out how and where to display my minifigures!

Picked up SW Snowtrooper battle pack a few weeks ago. Still sitting in the box.

In the five weeks since I've posted, I've gone on a bit of building binge and have built everything save for the modular buildings and a couple of $130 sets. Those are the ones I can't build due to a lack of display/storage space.

I find it's kind of like reading a book; I felt like there just wasn't any time for building, but if you actually dedicate time just for Lego you end up with plenty of time.

Fire Brigade, PQ Rise of the Sphinx, (and since the wife loves Harry Potter) Hogwarts Express, Hogwarts (4867) and the Forbidden Forest. We just finished up HP Burrow tonight.
