Is there any place to see how many of each set is produced/sold? That would be interesting but I've never seen anything like that before.

Not really.
Sometime in a few months LEGO releases a "This theme sold well" booklet, it's very broad because LEGO isn't a publicly traded company and doesn't really need to share great details. But if a set sells very well LEGO likes to brag.
But it you want to know that set 41027 sold 57.924 copies, I think LEGO doesn't really share that.
